A gourmet balsamic vinaigrette dressing recipe is made from fresh
ingredients and a traditional aged balsamic vinegar. We encourage
the use of Caroliva's 18 year Blasamic Reserve. A balsamic vinaigrettenot
taste great, but is also a healthy alternative to a creamy store
bought salad dressing as it is low carb and low cal in nature.
Making your own oil and vinegar dressing or balsamic vinaigrette
salad dressing, such as a raspberry vinaigrette can make a nominal
green salad become gourmet.

| Balsamic Marinated Tomato and Mozzarella Salad Simple salad marinated
in a combination of olive oil and balsamic vinegar. Made with onion,
garlic and basil. The longer it sits, the better it gets. Also great
served over pasta or with greens, vinaigrette tomato.
Ingredients:
¼ cup olive oil
¼ cup aged balsamic vinegar,
½ tspn salt
pinch of fresh ground black pepper
1 clove minced garlic
3 Tablespoons chopped fresh basil
¼ cup chopped sweet onions
1 ½ cups mozzarella cheese, grated or cubed
1 pint cherry red ripe tomatoes, halved or quartered
4-6 serv
Mix together first five ingredients for dressing. Toss with cheese
and tomatoes. As an alternative baby spinach leaves and romaine
lettuce can be added to make this a green salad.
Chill until ready to serve.
